Sight: Deep violet, with ruby highlights.
Nose: Intense notes of black cherries, figs and sour cherry jam, followed by a delicate violet perfume. Spicy notes, like white pepper, and liquorices.Barrel ageing contributes with a caramel and vanilla touches.
Mouth: Stands by its intensity and balance. With firm and well rounded tannins, offers a long mouth finish. Results in an extremely elegant wine.
Vat: Stainless still tank up to 20.000 lts.
Alcoholic fermentation: It´s realized between 28 – 30°C
Malolactic fermentation: It is done after alcoholic fermentacion has ocurred.
Maceration: 3 or 4 weeks. Delestages and 10 pumpovers during fermentation enhanced the wine’s extraction.
Winery aging: 24 months
Oak aging: 12 months
Bottle aging: 8 months
