Tasting notes

Sight: Intense and opaque Bishop’s purple red.

Nose: Ripe red fruits, raisins, blackberries, spices, smoke and fresh tobacco.

Mouth: Well-balanced palate, of intense and firm tannins. Complex finish due to its ageing in French oak.


Winemaking

Vat: Stainless steel tanks with individual temperature control system of high accuracy.
Alcoholic fermentation: From 15 to 20 days with cultured yeasts. Temperature: 77ºF.
Malolactic fermentation: Natural and complete, from 20 to 30 days.
Maceration: Cold maceration previous to fermentation for 4 days; post- fermentative maceration for 14 days. Temperature: 46/50ºF. Duration: 48/72 hs.
Winery aging: 12 months
Oak aging: 12 months
Bottle aging: 12 months

Total acidity: 6 g/l
Reducing sugar: 3.1 g/l
