Alcoholic fermentation: Cooling down the grapes before placing them in the tank. Cold maceration for 4 to 6 days. Alcoholic fermentation for 10 to 12 days with wild yeasts at 80 to 84ºF in small stainless steel tanks, daily 3 to 4 pumpovers.
Malolactic fermentation: Gently basked pressed before going into French and American oak barrels.
Maceration: 5-to-12-day post-fermentative maceration.
