Mouth: The mouth-feel is pleasant and well balanced and the long, the lingering finish is dominated by sweet, velvety tannins.
Alcoholic fermentation: In stainless steel tanks with culture enzymes and yeasts.
Malolactic fermentation: 60% in stainless steel tanks (spontaneous) and 40% in oak barrels (induced).
Maceration: Three days in cold with carbonic gas, then eight-day fermentation and finally seventeen-day maceration.
