Alcoholic fermentation: In stainless steel tanks with culture enzymes and yeasts for 10 days at 24ºc degrees.
Malolactic fermentation: 100% with lactic bacteria sowing in stainless steel tanks.
Maceration: Three days in cold with carbonic gas and dry ice. After fermentation a seven-day maceration with submerge cap at low temperature.
