Winemaking

Vat: Picked by hand in 15 kg cases and transported to the winery in 20 kg cases. The pressing was carried out with whole berries.
Alcoholic fermentation: Must decanting for 48 hours at 50ºF. Fermentation during 12 days at 57,2 to 60,8ºF with culture yeasts.
Malolactic fermentation: Second fermentation carried out under the Champenoise method during 21 days. 9 months on its lees. Liqueur d'expedition, dosage.)
Winery aging: 8 months
Bottle aging: 12 months
