Alcoholic fermentation: From 15 to 20 days with cultured yeasts. Temperature: 77ºF.
Malolactic fermentation: Natural and complete, from 20 to 30 days.
Maceration: Cold maceration previous to fermentation for 4 days; post- fermentation maceration for 14 days. Temperature: 46/50ºF. Duration: 48/72 hs.
