Sight: Dark garnet, with violet highlights.
Nose: Intense and complex. Notes of back fruits such as blackberries, blueberries, cherries and redcurrant, together with spicy notes like green pepper and licorice. This pure expression of Cabernet Sauvignon from Finca Los Aromos is completed with cedar, tobacco, and smoked notes given by oak ageing.
Mouth: Great structure, intensity and well balanced. It outstands for its concentration and round tanning being a long lasting and elegant wine.
Vat: Stainless still tank 8.000 lts.
Alcoholic fermentation: 82-86 ºF
Malolactic fermentation: it is done after alcoholic fermentacion has ocurred.
Maceration: 4 or 5 weeks. We used delestage and manual punchdowns during the first 15 days to enhance extraction.
Winery aging: 36 months
Oak aging: 18 months
Bottle aging: 21 months
