Beginning of harvest, the winery was unfinished, and the grapes were harvested and wanted to be wine, naturally. They were placed in cold chambers to gain time till the winery was fully equipped.
The grape began to dry up, generating large levels of concentration and Jean thought the grapes were lost and there is not way he will be able to make wine out of them. Few weeks later, when the winery was finally finished the vinification started. These grapes led to one of the best Merlot that Bousquet has ever produced.
